Tamatari Sev Chawal

Check this out....This recipe is brought to you directly from the kitchen of Chef Bhatia - A Michelin Star celebrity


Ingredients

2 tablespoon vegetable oil
1 teaspoon cumin seeds
1 teaspoon fennel seeds
1 teaspoon fresh ginger, chopped
1 teaspoon green chilli, chopped
2 large tomatoes, finely chopped
2 cups pre cooked boiled rice
4 tablespoon spicy sev
1 teaspoon lemon juice
To taste salt


Method


Heat oil in a pan to medium heat and add the cumin seeds and fennel seeds. As
they begin to splutter add the ginger, green chillies and tomatoes. Saute for a
minute and add the pre cooked boiled rice. Remove the pan from the heat
Add the spicy sev, salt and lemon juice and gently toss the rice together

Zucchini "Fettuccine" With Tomato Sauce

Try this simple - healthy salad.....I have re - created this from one of the TV shows

4 Large Zucchini / Yellow Squash
Salt to taste
5 Medium firm tomatoes
1/4 cup Extra Virgin Olive oil
1/2 Clove finely chopped Garlic
1tsp Jalapeno pepper - finely chopped
Freshly ground pepper
1/4 cup chopped pine nuts

1/4 cup chopped fresh basil
1 teaspoon chopped fresh oregano or dried Oregano



Trim and peel the zucchini, then use a mandoline or a vegetable peeler to thinly slice lengthwise into wide ribbons (stop when you get to the seeds)
Cut the ribbons into 1/4-to-1/2-inch-wide strips to make them look like fettuccine.
Transfer to a colander and toss with 3/4 teaspoon salt; let drain in the sink, tossing occasionally, about 30 minutes.
Rinse well and pat dry.
Meanwhile, peel the tomatoes using a sharp vegetable peeler, then halve horizontally and squeeze out the seeds
Puree 1 tomato with the olive oil, garlic, jalapeno, and 1/4 teaspoon each salt and pepper in a food processor or blender. Transfer to a bowl
Chop the remaining 4 tomatoes and add to the bowl; add the pine nuts, basil, oregano, and salt to taste.
Divide the zucchini among bowls and top with the tomato sauce. Top with more pine nuts and drizzle with olive oil.

Spinach Cheese Swirls with Avocado

This tempting appetizers look like they are reallyyyyy difficult to make, but guess this is one recipe that a fresher to cooking experiments can try their hands on.....and results in flaky puff with your choice of stuffing and an awesome dressing

(I am sorry for the clumsy pics, as I was in a hurry while preparing this...but next time when I bake this will post more clearer pics )

So all you require is

1 Sheet Puff pastry ( thawed)
All purpose flour to dust
Rolling pin
Oil - for brushing


Stuffing - Cheese Spinach Mixture

1/2 cup Spinach - finely chopped
3 Tbsp of fresh coriander / Parsley leaves - finely chopped
Salt to taste
1/2 tsp fresh ground pepper
2Tbsp Mozzarella Cheese - grated
1Tbsp Parmesan cheese - grated




Heat the oven to 400°F.
Sprinkle the flour on the work surface / baking tray.
Unfold the pastry sheet on the work surface and roll it out a bit


Brush the pastry sheet with oil
Mix all the ingredients for the stuffing
Top the sheet with the cheese and spinach.mixture
Starting at a short side, roll up like a jelly roll
Cut into about 20 (1/2-inch) slices
Place the slices, cut-side down, onto the baking sheet lined with parchment paper
Brush the slices with oil
Bake for 15 minutes or until the pastries are golden brown
Remove the pastries from the baking sheets and let cool on wire racks for 5 minutes



Topping / Dressing

3Tbsp Mashed  ripe avocado
1Tbsp boiled corn kernels
1Tbsp onion - finely chopped
1/4 tsp green chillies - finely chopped
1Tbsp Tomatoes - finely Chopped
Salt to taste
1/4 tsp lemon juice

Mix all the above ingredients and keep aside



Finally........In a plate place the pastry swirls and top it with the Avocado mix
Sprinkle some fresh ground black pepper over it



TIP's:


For a flavor twist, try a different cheese.  Any shredded cheese will work in this recipe
You have endless options for the stuffing's
For best results, make sure to remove as much liquid as you can from the greens before adding it to the pastry. If it's too wet, it may make the pastry soggy
For the toppings, you can also try versions such as Pesto, Hummus, Cucumber - Yogurt Dip,  mixed glazed fruits, Apple Plum Reduction

Mango-Tomato Summer Salsa Recipe


This is one of my fav from ifood and this recipe fits in with many cuisines such as Thai, Mexican, American, Vegetarian, Summer Parties, and is kid friendly. It is a Healthy Choices dish easy to make just dice and mix! It is Weight Watcher  friendly too!!!!!!

The marriage of the flavours is exciting and refreshing. Tomatoes with mangoes and avocado is spiced up with the Thai chiles and lime juice plus plenty of garlic. The cucumber adds a cooling effect and great texture contrast to the smooth sweetness of the mangoes and avocado buttery flavours. This can be chilled and served in individual small soup bowls, or as a salsa-type dip for corn chips or toasted nan or pita wedges. It is also a wonderful side or garnish
The avocado should be just ripe but not too soft, the same for the mango.
Choose tomatoes that are meaty and not with large gel areas. Using fresh lime juice and fresh cilantro is key to a great flavour. Please use fresh garlic not the already crushed preserved type of garlic. Even Spring garlic is nice in this recipe if it is available. Another nice way to serve this is on grilled baguette bread slices on a long diagonal sort of a Thai bruschetta.
This refreshing Summer recipe is perfect if you are watching your calories
I personally omitted Garlic since I am not very fond of raw garlic





1 mangoes - peeled, seeded and diced

1 avocado - peeled, pitted, and diced

5 medium tomatoes, diced and seeded

3 Thai Dragon Chiles (Phrik Chee Fa), minced and seeded, to your taste or You can also use fresh green chillies / Jalpenos

1 medium, diced

1/2 cup chopped fresh cilantro (Pak Chee/ coriander leaves)

5 cloves garlic, minced

salt to taste


In a medium bowl, combine the mango, avocado, tomatoes, cucumbers, chiles, cilantro, and garlic. Stir in the salt, lime juice, red onion, and lime juice.

To blend the flavors, refrigerate for about 30 minutes or longer before serving.



Note:

A variation can be made by using green papaya shredded in place of cucumber if you want a firmer contrasting texture. You also can use slivers of mint or Thai basil (bai Horapha) in place of cilantro (Pak Chee), or slivers of Kaffir Lime leaf (bai Magroot).

You are what you eat, so eat well. A stupendous insight of civilizations past has now been confirmed by today's investigative, nutritional sciences. They have shown that what was once called 'The Doctr
ine of Signatures' was astoundingly correct. It now contends that every whole food has a pattern that resembles a body organ or physiological function and that this pattern acts as a signal or sign as to the benefit the food provides the eater. Here is just a short list of examples of Whole Food Signatures. 

A sliced Carrot looks like the human eye. The pupil, iris and radiating lines look just like the human eye...and science shows that carrots greatly enhance blood flow to and function of the eyes. 


A Tomato has four chambers and is red. The heart is red and has four chambers. All of the research shows tomatoes are indeed pure heart and blood food. 


Grapes hang in a cluster that has the shape of the heart. Each grape looks like a blood cell and all of the research today shows that grapes are also profound heart and blood vitalizing food. 


A Walnut looks like a little brain, a left and right hemisphere, upper cerebrums and lower cerebellums. Even the wrinkles or folds are on the nut just like the neo-cortex. We now know that walnuts help develop over 3 dozen neuron-transmitters for brain function.

Pineapple Cheese Sandwich without Bread

Back in India...You can find numerous street stalls , each having its own unique cuisine and flavor.....I just picked this one from them

But Note: This is would not be very appropriate for someone who prays for not having a sweet tooth


So You would require

 4 Cheese slices
[ Alternatives: You can use Tofu / Cottage cheese slices / cubes]
1Tbsp Pineapple Jam
4 thin slices Cucumbers
2 slices Tomato
1 slice Tinned pineapple
Salt and Pepper

Places 2 cheese slices together ( if you think you have not got the desired thickness you can also place 3 cheese slices together)
Spread in the jam and add in cucumber and tomato
Place a pineapple slice and sprinkle it with salt and pepper
Cover it with another 2 cheese slices and serve

Note: This can also serve as a cocktail snack.....for which you need not cover it with another cheese / tofu / cottage cheese cube ....Toothpick it so that it remains together.....You can replace the jam with an olive....Works great

Mother s Day Special

Happy Mothers Day to all the lovely Mom's out there.....have you every wondered how did it come into Existent....

"One of the early calls to celebrate a Mother's Day in the United States was the "Mother's Day Proclamation" by Julia Ward Howe. Written in 1870, it was a pacifist reaction to the carnage of the American Civil War and the Franco-Prussian War. The Proclamation was tied to Howe's feminist belief that women had a responsibility to shape their societies at the political level."

In United States, its celebrated on the Second Sunday of May,while there are countries which coincide it with existing celebrations honouring motherhood, like Mothering Sunday in the UK or, in Greece, the Orthodox celebration of the presentation of Jesus to the temple (February 2). In some countries it was changed to dates that were significant to the majority religion, like the Virgin Mary day in Catholic countries, or the birthday of the daughter of the Prophet Muhammad in Islamic countries

So today, here are some recipes for our Great Mom's toasting to their Long lives ..........Love you Momma

BAKED SPINACH WITH CORN

Many women have problems with their Hemoglobin(Hb) levels, so here s simple and easy to make recipe with the Iron (Fe) richness of spinach and Tomatoes ,Calcium from Panneer packed with a difference!



Serves 6

Ingredients:-

For the spinach layer
3 cups chopped spinach (palak)
½ cup chopped tomatoes ( Finely )
½ cup chopped onions (Finely)
½ cup boiled tender corn kernels
2 green chillies, finely chopped
1 Tbsp Butter
salt to taste

For the potato layer
2 cups boiled and grated potatoes
½ cup crumbled paneer (cottage cheese)
2 teaspoons lemon juice
1 tablespoon chopped coriander
1 green chilli, chopped
salt to taste

Other Ingredients

  1 tomato, sliced
1 teaspoon fresh cream
3 tablespoons grated cheese  - I used Cheddar but you can try with other variations
 ½ teaspoon oil for greasing

To Proceed :

For the spinach layer

  • Heat butter in a pan and saute the onions for a minute. Add the green chillies 
  • Add the spinach and cook for 1 minute and then add chopped tomatoes and saute for a minute
  • Now add the corn and the seasoning , mix well and set aside

For the potato layer

  • Mix all the ingredients well

Finally.....

  • Pre heat Oven at 230°C (450°F)
  • Take a baking dish and grease it evenly
  • Layer it with the potato mixture followed with the spinach and corn mixture 
  • Place the tomato slice and spread the cream
  • Sprinkle cheese and bake for about 10 - 15 mins or until the cheese turns color
  • Serve hot with Garlic bread / Bread sticks 
 Note: let me know if you are looking for a modified Indian Spicy version for the same....



Since We have given our Mom's enuf dose of Fe...need to add something that helps in absorption of Fe....and  here it is

RANGEEN CITRUS COOLER

A tasty and delightful drink prepared using khus syrup, rose syrup, lemon and orange juice
Serves : 4

1/4 cup Khus syrup
1/4 cup Rose syrup
1/4 cup Orange squash
1 cup Sugar       
1/2 cup Lemon juice
Fresh mint leaves to garnish


Take Khus , Rose and Orange in 3 separate bowls and dilute them with 2 - 3 Tbsp water
Pour these in 3 different trays and set them to freeze
Meanwhile heat equal quantities of sugar and water to form the syrup, once it starts to boil set aside to cool

For the Final Touch 

Take tall glasses and pour 2Tbsp of lemon junice, add a Tbsp of sugar syrup to each ( you can add more depending on the sweetness you want ) along with 2Tbsp water. Mix well
Top it along with the colored ice cubes and mint leaves for garnish
Serve Chilled

Trying to adopt some of the local recipes.....

Though Indian snacks are plently available nearby, I thought let me have some first hand experience on some of the My version modified recipes



For a healthy snack, thick slices of cucumber topped with delicious homemade hummus are the perfect combination.
You can also try toppings for your cucumber "crackers" like mayonnaise with 1 or 2 halved or quartered cherry tomatoes, or peanut butter.


Cucumber "Crackers" with Hummus

Hands-On Time: 20 minutes
Ready In: 20 minutes
Yield: about 1 cup of hummus
Ingredients

1 cup canned chickpeas
1 tablespoon fresh lemon juice
1 1/2 tablespoons tahini
1 small garlic clove
1/4 teaspoon salt
2 teaspoons olive oil
2 teaspoons minced fresh parsley
1/2 teaspoon paprika
Cucumber, sliced
Cherry tomatoes, quartered

Directions

1. Drain the chickpeas and rinse them under cold water. Put them in a blender or a food processor, then add the lemon juice, tahini, garlic, salt, and olive oil. Purée the mixture until smooth and creamy, adding a little water if it's too stiff. Transfer the hummus to a small bowl and stir in the parsley and paprika.

2. Top each cucumber slice with a dollop of hummus, then top with a cherry-tomato quarter.

Nutritional Information
Per Serving (1/4 cup hummus and 1/4 cucumber): 150 Calories, 5g Protein, 20g Carbs, 4g Fiber, 5g Sugar, 6g Fat, 1g Saturated Fat, 333mg Sodium, 0mg Cholesterol.
Chickpeas are a good source of magnesium — which helps transport energy in the body — and are an even better source of fiber.


Cucumber and Yogurt Dip
Whether called tzatziki (Greece), cacik (Turkey), or raita (India), it makes a delicious dip for warm wedges of pita bread.
Hands-On Time: 25 minutes
Ready In: 30 minutes
Yield: about 1 1/2 cups (6 servings)
Ingredients

1/2 pound cucumber (roughly 1 medium)
1 cup plain yogurt
1 small garlic clove, minced
1/3 cup finely chopped fresh mint leaves
Salt to taste

Directions

1. Peel and seed the cucumbers. Using the large holes on a box grater, grate the cucumber into a small bowl.

2. A handful at a time (kids like doing this), gently squeeze the water out of the grated cucumber. (More than half a cucumber's weight is water.)

3. Return the cucumber to the bowl and stir in the yogurt, garlic, mint, and salt.

Jiffy Indo American dishes

Hey Guys......I have recently moved to NYC/NJ..and the first thing that worries me are lunch boxes for my hubby......Life was so peaceful @ India, with his office providing lunch...and here.......Sure many would have faced the same issue , so here are some "Food for Thought" recipes for a jiffy lunch

Indian Bento

A note on bento: Bento is, very simply put, a Japanese lunchbox that's making waves across the U.S.. Traditionally made with rice, meat, poultry or fish and pickled or other cooked vegetables, bento can be as intricate or simple as you'd like.
Bento boxes can be as simple or elaborate as the food they hold, from laquered boxes with built-in dividers to reuseable plastic containers available just about everywhere lately. It's important to keep moist foods separate from dry foods to decrease the risk of spoilage. Silicone muffin liners are ideal for keeping foods separate, but anything from dry lettuce leaves to waxed paper works as well.
While leftovers are perfect, any food that tastes as good chilled as it does hot will do. To keep foods cold until lunch time, small condiment packets like kethcup, mustard, mayo or relish, when frozen, are the perfect size ice-pack whether meant to be consumed or not.
Fill-ins help food keep its shape and stay put; some ideas for fill-ins are grape tomatoes, grapes, baby carrots, individually wrapped cheeses and dried fruit.

So you can add the following for a Veggie Bento

Spicy Chickpeas and Tomatoes:

Hands-On Time: 10 minutes
Ready In: 15 minutes
Yield: 4 servings
Ingredients

2 cups cooked chickpeas
1 large tomato - seeded and diced
1 large green pepper - seeded and diced
1 cup yellow onion - finely chopped
2 Tablespoons olive oil
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon Kosher salt

Directions

1. Heat oil in a skillet over medium-high heat. Add onion and pepper and cook until fragrant - about 3 minutes.
2. Add chickpeas, tomato, spices and salt. Stir well and heat through
3. Cool and pack ...this can be reheated just before consuming

Spiced Yogurt Dip:


Combine
1 cup plain thick yogurt - whisked well
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
2 Tablespoons chopped fresh cilantro
1 Tablespoon honey
Salt to taste.

Blend well and chill until serving time.
This can be coupled with some Nachos / Green Salad / Spinach - Veggie Fru Salad / Risotto / any portion of your choice
