ICED CHOCOLATE CREAM

You would require

8Tbsp Chocolate Sauce        
2Cups Vanilla Ice cream      
8Tsp Instant Coffee powder
4Cups Chilled Milk              
1Tbsp Whipped Cream      
Chocolate Vermicilli  - To garnish
2-3Tbsp Sugar                      

Line irish coffee glasses with chocolate sauce n place them in freezer till chocolate sets
Blend vanilla ice cream, coffee powder, sugar and milk in a blender
Pour into the glass
Top with wipped cream and sprinkle some chocolate vermicelli / chocolate shavings
Serve immediately

Just Parantha's

This week the cloud is so dark and gloomy out here.....craving to have something hot .....and it reminded me about Paranthas with aachar.......ummmm.....Of late i was enlightened that Parantha comes from Parath + Atta ...which means layers of cooked flour.....I am sure while you must have come across it been described as An Indian Flatbread .....or shallow fried flat bread....and so on...so here I am with some of the few successful flat (bread )experiments ...though you can make 100's of different varieties combining different mixtures for stuffings of your choice

SPINACH AND BABY CORN PARATHAS


These parathas has a high nutritional with wheat flour,and corn.Spinach adds to its wealth of  iron, folic acid and vitamins
These nutritious parathas are ideal to be packed in your kid's lunch box. They can also be served at parties with spicy pickles like garlic pickle or with a sweet and spicy vegetable pickle.

Makes 6 parathas.

For the dough

 1 cup whole wheat flour
 2Tbsp Milk / 1Tbsp curd
 1 teaspoon ghee / unsalted butter
 salt to taste

For the spinach and baby corn filling 

 ½ cup spinach, blanched, drained well and finely chopped
 ½ cup baby corn, finely chopped
 2 green chillies, finely chopped
 1 tsp ginger , finely chopped
 2 tsp masala ( mix in garam masala, cumin powder, amchoor, red chilly powder, whole cumin seeds)
 1 teaspoon oil
 salt to taste

Other ingredients 

 Vegetable oil for cooking - you can also use Olive oil / spray

For the dough
  • Combine all the ingredients and knead into a soft dough using enough water. Knead well , cover it and keep it aside for 10 - 15mins. 
  • Divide the dough into 6 equal portions
For the spinach and baby corn filling 
  • Heat the oil in a pan, add the baby corn and sauté for 2 to 3 minutes. 
  • Add the spinach and all the remaining ingredients and mix well. Saute for a minute and turn off the flame
To proceed
  • Roll out one portion of the dough into a circle of 75 mm. (3") diameter. 
  • Place one portion of the spinach and baby corn filling in the centre of the circle.  
  • Bring together all the sides in the centre and seal tightly. 
  • Roll out again into a circle of 150 mm. (6") diameter with the help of a little flour. 
  • Cook the parathas on a hot tava (griddle), using a little oil, unitl both sides are golden brown. 
  • Repeat with the remaining dough and filling to make more parathas. 
  • Serve hot...goes well with the raw mango loungi

Home Bar III: Fig and Rose Shake

Here is one of my hubby's fav milkshake ......Try it and let me know how does it works for you .....

Fig and Rose Shake
Serves 2

5-6 Dried Figs            
2Tbsp  Gulqand  ( sweet rose petal preserve) You can use the Kohinoor brand available in Indian stores



  2 -3 Tbsp Water                
  2 cups Chilled Milk      
Ice Cubes- As required           

In a blender pour in water along with figs and gulqand and blend well
Once done, pour in milk and ice cubes and churn it again until done
Serve it chilled in frozen glasses

Note:
You can vary the quantity of Gulqand according to your taste, also you can add sugar if desired
You can also use frozen milk....it taste great, but eliminate the ice cubes while using frozen milk

Thai Iced Tea

As i woke up this morning, expected it to be a dull day.....but felt summer is on its way.....bright and chirpy, and my plans of having onion anar pakodas were turned down by Iced Tea.....Its so convenient to stir up the powdered flavored iced tea , so lets thought to take a step ahead and try having Thai Iced Tea....

Thai Iced Tea Mocktail Recipe is a non-intoxicating beverage. The word 'Mocktail' is a derivative of two words - 'mock' meaning a copy or imitation of something and the word 'cocktail' meaning a mixed drink

Its not that you dont get a mixture of the Thai version...I did find one online



But as usual experimenting has always been the first priority .....so here is one for you guys too.....but ofcourse its tried and tested :) :)

1/4 cup Tea
1/2 cup Hot water
2 tsp. Condensed milk 

Mix all ingredients in a cocktail shaker / stirrer and pour into an unusually shaped glass. 
Allow it to cool for a while and refrigerate until use
Add Crushed Ice / ice cream  / whipped cream and decorations of your choice to create this unique specialty drink from an easy to whip recipe......
Top with with more condensed milk if you wish to have a more sweeter version 

Also I used white tea leaves but you can experiment it with Black ( which is used commonly) or Green leaves.....


Right now its a perfect glass for me to sip and relax .....catch you guys later ...Cya
